Why is this wine called Novello?
Vino Novello is the new wine, that is the one just made, the one that is drunk a few months after the harvest.
What makes it possible to consume a wine very shortly after harvesting the grapes is the fermentation process used for its vinification: the carbonic maceration method is used to make Vino Novello.
Through this procedure, the fermentation, different from the traditional one, takes place in a few days.
Between carbonic maceration, subsequent processing and bottling, according to Italian legislation, Vino Novello can be marketed starting from 30 October of the same year in which the grapes used to make it were harvested.
Then there is also a date, always according to current legislation, which indicates the end of the marketing of this wine, which is December 31st of the same year.
So the Vino Novello leaves the cellars exclusively within two months.
Obviously there is a reason: the wine obtained through carbonic maceration is a light wine, extremely rich in aromas and perfumes, because this type of fermentation favors the extraction of the aromatic components. At the same time however, the wine does not have the time or way to develop an important structure, body and the extraction of tannins is minimal: the consequence is that the wine obtained is not at all suitable for aging.
Let me be clear: it is not a defect! This type of fermentation is specially chosen to create a wine in which the aromatic component is the protagonist compared to all the others. This goes to the detriment of its "durability" over time, but it is, let's say, a calculated risk: Vino Novello offers gustatory sensations that other wines produced with other methods cannot give; so it doesn't matter if it's not long-lived. Novello expresses itself at its best for a short time and you need to be patient, tasting Novello is an experience that is renewed from year to year.
This is why it is only sold for a short time: Novello is an exclusively young wine, it never gets old!
Vino Novello is at the peak of its gustatory quality for that short period of time, after which it is no longer Novello, it is no longer good.
Not that we have to discard it on December 31st: you can still taste it for a while, but not for long.
